Simple clear soup



Very simple, but gorgeous taste!

Enjoy erregant taste and appearance.

ingredients(serves 1)



3 driebrd wheat gluten
greens
yuzu
3/4 U.S. cups Japanese soup stock
salt to taste

directions

1. Cut greens into bite size.


2. Slice yuzu rind thinly.






3. Place dried wheat glutens, greens, yuzu rind into bowl.


4. Place the stock, salt into a pot, bring to the boil over a medium heat.


5. Ladle salted stock into bowl.

Rice with mushrooms



Aroma of mushrooms attracts everyone.

ingredients



2 1/4 U.S.cup rice
1 2/3 U.S.cup mushrooms
2 1/2 U.S.cup Japanese soup stock
3 tsps soy sauce
1 1/2 tsps salt

directions

1. Wash the rice, drain on a sieve.

2. Remove the stem of mushrooms, cut into bite size.






3. Place the rice in the rice cooker.
Add Japanese soup stock, soy sauce, salt, mushrooms, and mix lightly.








4. Add mushrooms, turn on the cooker.

5. When cooking is finished, open the lid, and mix the rice so that the ingredients will spread evenly.


6. Transfer to serving plates.

Shabu-Shabu

"Shabu-Shabu" is a typical hot-pot dish in Japan.

Swish extremely thin slices of meat back and forth several
times in dashi-soup boiled in pot, and dip them in sauce(ponzu or sesami sauce).
Vegetables such as chinese cabbage, chrysanthemum leaves, green onions or tofu or kudzu noodles are often boiled in pot with meat.

We call it "Gyu-syabu" when we cook beef,and call it "Buta-syabu"
when we cook pork.

Japanese tea (Green tea)

Japanese tea is Unfermented tea.
It is different from fermented tea such as English tea, semi-fermented tea such as Oolongtea in China.

There are several kinds of Green tea such as "Sencya","Bancya","Houjicya","Genmaicya","Gyokuro"and"Kabusetya".
They are made from tea leaves and stems.

We put dried tea leaves in the teapot called "Kyusu",
and pouring hot water in it,
and pour it into Japanese tea cup after waiting until a tea leaf opens.

"Matcya" is powdered tea stirred into hot water.
There are two kinds in powderd green tea.
One is strong tea, the other is weak tea.
They are used in the tea ceremony "Sado".

"Ochazuke" -Boiled rice with tea poured over it-.

Very simple dish loved by every Japanese.

To make ocyazuke is very simple.
Put rice into bowl.
Place ingredients(pickled plum,saled salmon) on top of the rice and sprinkle over the seaweed and white sesami seeds.
Pour hot Japanese tea or Japanese soup stock over the rice.

Rice Porridge and Pickled Plum

"Shirogayu" is rice porridge.

To make "Shirogayu", boil rice with water in a pot.

We conventionally eat "Shirogayu" when we are not feeling well or having
digestive disorder because it is easy of digestion.
"Umeboshi" is pickled plums. Pickled plums have antibacterial effect
and regulate the functions of the intestines.
So it is a traditonal custom that we eat rice porridge with pickled plum.
